Mixed vegetable raita is the simplest raita to make on short notice and the good thing is that you can change the taste a bit by changing the vegetables.

Ingredients
Yogurt | 2 cups |
Chopped tomato | 1/4 cup |
Chopped cucumber | 1/4 cup |
Chopped red onion | 1/8 cup |
Chopped coriander leaves | 1 tbsp |
Roasted and ground cumin seeds | 1/4 tsp |
Salt | 1/4 tsp |
Chilli powder (optional) | 1/8 tsp |
Method
- Whisk yogurt so that there are no lumps.
- Add everything in the yogurt and mix.
- Garnish with coriander, tomato and cucumber and serve cold or at room temperature. Mixed vegetable raita is ready.
Notes:
- Skip the vegetable you don’t like or you don’t have. Try replacing it with something you like.
