Zucchini is a sweet gourd that tastes great even as a salad. If it is stuffed with some spices and grilled, it becomes even more delicious. Stuffed Zucchini is one such recipe.

Ingredients
Zucchini | 3 |
Vegetable Oil | 1 tbsp |
Salt | 1/2 tsp |
Chaat Masala | 1/2 tsp |
Red Chilli Powder | 1/2 tsp |
Amchur or Dried Mango Powder | 1/2 tsp |
Garam Masala | 1/4 tsp |
Method
- Wash zucchini. Chop off the head and the end. Make a lengthwise slit in each zucchini to fill the spices. Cut each zucchini in half or in three pieces.
- Mix all the spices in one bowl. Gently open the slit of a zucchini piece and fill in the spice mixture. Repeat with other pieces.
- Heat oil in a large nonstick pan. Add zucchini to the pan and reduce the heat. Cover it for 2 minutes.
- Do not toss the pieces until the spices are a little moist and stick to zucchini.
- Open the lid, turn up the heat and gently turn over the zucchini pieces.
- Cook till they are brown on all sides (no more than 10 minutes). You don’t want to make zucchini too soft.
- Stuffed Zucchini is ready. Serve hot as a starter.
Notes
- Don’t overcook zucchini. They taste better when they are a little crisp.
- You can cut them into smaller pieces if you like.
- When cooking stuffed vegetables, pick similar size vegetables so that they all cook in the same time. Don’t choose very fat zucchini as spices will not be able to penetrate well and it will taste bland.
