Stuffed Mirch Pakori is an absolutely awesome pakori if you like spice food. It takes a while to make it but it’s just so yummy that you would want to make it often.

Stuffing Ingredients
Potatoes | 2 medium |
Salt | 1/2 tsp |
Red chilli powder | 1/2 tsp |
Cumin powder | 1/2 tsp |
Coriander powder | 1 tsp |
Amchur (dry mango powder) | 1 tsp |
Besan Batter Ingredients
Besan (chickpea flour) | 1 cup |
Salt | 3/4 tsp |
Red chilli powder | 1/2 tsp |
Heeng (asafoetida powder) | A pinch |
Water | 5/8 cup |
Other Ingredients
Spicy Peppers | 10 |
Vegetable oil | For frying |
Method
- Boil the potatoes till they are soft: Put potatoes in a pressure cooker. Add about an inch of water. Close the lid and cook. Turn down the heat once it starts whistling . Cook for 7 more minutes. Turn off the heat. Open the cooker when steam dies down.
- Peel the potatoes once they are cold. Chop or grate them coarsely. Potatoes should not become mushy.
- Heat a table spoon of oil in a large nonstick pan. Add cumin powder, coriander powder, red chilli powder and amchur.
- Saute the spices for a few seconds till fragrant. Add potatoes and salt. Saute for a few minutes. Turn off the heat.
- Slit the peppers lengthwise and remove the seeds. Gently fill them with the potato mixture. Keep aside.
- Prepare the besan batter: Sift besan in a bowl. Add salt, red chilli powder and heeng. Add about 5/8 cups of water and whisk till smooth.
- Heat oil in a wok. Drop pea size besan batter in the oil. Now if it sizzles and floats, oil is hot enough. If it browns immediately, the oil is too hot, cool it off a bit. If the drop stays at the bottom for a few seconds, oil is not hot enough.
- Dip a pepper in the besan mixture and make sure that it’s fully covered with besan.
- Gently drop it in the hot wok. Repeat with a few more peppers. Fry till they are golden brown.
- Stuffed Mirch Pakori is ready. Serve them hot with Mint Coriander Chutney and ketchup.
Notes
- You may have to adjust the duration of boiling potatoes depending on your cooker and stove.
- If you sift the besan before adding water, there will be no lumps in the batter.
- Remove seeds from pepper only if the peppers are too hot.
- For variation try Jodhpuri Mirch (Spicy Pepper Pakori).
- These peppers are also known as banana pepper and they are rich in Vitamin C, Vitamin B, potassium, magnesium and iron (source: wikipedia).
