Salad is the most undervalued category of food as far as Indian cuisine is concerned. It is served more like an after thought rather than a careful complementary preparation to the meal. All we do is to just cut onion, cucumber, tomato, radish and carrots, top it with salt and lime and that’s salad.
In the western world, much more thought is given to it. It must have at least 3 basic ingredients – the vegetables, the nuts, and a dressing. Dressing needs at least oil and some sour thing like lime juice. You can also add some fruits, some cheese and some pickles to it. And the salad has its own course before the main course.
A big percentage of working population in the western world these days eats salad for lunch because it’s healthy, it’s fast and it’s filling.
