Mandarin cake takes a little time but it’s so tasty and so healthy. The mandarins give it a very refreshing taste and almond meal makes it really nutritious. It has no refined flour and no oil. Love it.

Ingredients
Mandarins | 2 large |
Almond Powder | 200 gm |
Large Eggs | 4 |
Sugar | 3/4 cup |
Baking Powder | 1 tsp |
Butter | To grease the pan |
All Purpose Flour | 1 tbsp |
Method
- Wash mandarins and boil in water for one hour. Make sure that the pan is covered with lid.
- Drain the water and let the mandarins cool off.
- Chop the mandarins roughly (with the peels) and remove any seeds.
- Blend them to make a smooth paste. Should be around 1.25 cups.
- Beat eggs and sugar using an electrical mixer. It will take about 10 minutes but the batter will almost double in size.
- Add baking powder and almond powder and combine.
- Add mandarin paste and combine again.
- Line the bottom of the baking dish with wax paper and grease the sides. If you don’t have wax paper just grease the whole pan and dust it with all purpose flour.
- Pour the batter in the baking dish and bake it at 375 degrees Fahrenheit for about one hour in the preheated oven.
- Take the cake out and cool it off.
- It will settle down in the middle a little because it has no flour. Mandarin cake is ready.
- Remove from the pan once it’s cold and store in refrigerator. Slice it and serve.

Notes
- Always test the cake before taking it out of the oven: Stick a wooden stick in the middle of the cake. If it comes out wet, cake is not done yet. If it comes our pretty dry, cake is done.
- Instead of buying almond meal, you can grind the raw almonds very fine and sift it so that there are no almond pieces left.
- Mandarin is very similar to Indian Oranges (the ones with thin skin).
