Bruschetta is a starter from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and other toppings like vegetables and cheese.

Ingredients
Sourdough baguette | 1 |
Chopped cherry tomatoes | 1 cup |
Garlic | 2 cloves |
Fresh basil leaves | 20 |
Olive oil | 4 tbsp |
Balsamic vinegar | 3 tbsp |
Salt | 1/8 tsp |
Kali mirch (black peppercorns) | 1/8 tsp |
Parmesan cheese | 2 tbsp |
Method
- Chop tomatoes and basil leaves.
- Grate garlic finely. Mix oil, balsamic vinegar and garlic and leave it for a few minutes and then strain it. Throw away the garlic that is filtered out. Save one tbsp of the mixture for the bread.
- Mix tomatoes, basil, garlic infused oil, parmesan, salt, and pepper. Keep aside.
- Slice the bread. Coat bread slices with the saved garlic infused oil lightly on both sides.
- Bake slices in a preheated oven at 350 degree F for 5 minutes just to toast them a bit. You can even sprinkle the bread with some cheese before baking.
- Top each slice with the tomato mixture and Bruschetta is ready to serve.
Notes
- Please do not use regular tomatoes. Use cherry tomatoes only. They add that tangy flavor, which is missing in the regular tomatoes.
- If you cook often, it’s great to have a few basil plants in your kitchen garden. They keep growing as long as you pick leaves from the top and leave a few leaves at the bottom of the plant.
- Some times, I just top the sourdough bread slice with fresh mozzarella cheese or any other cheese of my liking, top it with basil, slices of cherry tomatoes, salt and pepper and serve it just like that. It’s a quick starter.
