Samak Rice Kheer is very similar to Rice Kheer except that it takes less time to make it. Samak rice is a fruit and not a cereal and that’s why it can be eaten in fasts. It is very easy to digest and tastes very much like rice. Samak rice is called Moriya rice in English.

Ingredients
Samak rice (sama ke chawal) | 1/4 cup |
Full Cream Milk | 1 litre |
Sugar | 1/2 cup |
Cashews, Raisins and Almonds | About 10 each |
Small cardamom (choti elaichi) | 3-4 |
Method
- Wash samak rice a few times and soak in water for about 30 minutes.
- Soak almonds in hot water for 5 minutes. Peel them and chop them. Chop the cashews also.
- Peel the cardamoms, and grind the seeds. Keep aside.
- Boil full cream milk in a wok. Once it boils, add the soaked rice without the water. Lower the heat and let it cook for 30 minutes. Stir every 5 minutes so that it does not get stuck at the bottom.
- Add all the nuts in the wok and let it cook for another 10 minutes.
- If the rice feels soft, add the sugar and the ground cardamom. Stir till the sugar dissolves. Turn off the heat.
- Samak Rice Kheer is ready. Once it cools down, store in refrigerator and serve it chilled.
Notes:
- The wok should have a thick bottom otherwise the milk will burn.
- Kheer becomes thick after becoming cold so don’t make it too thick when cooking. If it becomes too thick to eat, add some boiled milk just before serving.
- Feel free to add or remove any nuts you like.
- Samak Rice is also known as Jungle Rice, Bhagar, Samo, Varicha tandul and Echinocloa colona. It is high on calcium, potassium, phosphorus and amino acids except lysine.
